Recipe "TEKWAN"..... from West Sumatera... Good to eat while warm
TEKWAN
INGREDIENT:
250 gram shrimp (grind using a food processor)
Then mix with egg white, flour or tapioca, salt and pepper.
Take a teaspoon of the dough one at a time, shape into balls and drop into
bolling water. Wait untuil the balls float
Note: set aside shrimp heads and shells to make broth
MAIN INGREDIENT:
1 JICAMA/JULIENNED
25 GRAM GLASS NOODLE, SOAKED IN HOT WATER
20 GRAM BLACK FUNGUS, SOAKED IN HOT WATER AND CUT
25 GRAM DRIED LILY FLOWER, SOAKED IN HOT WATER AND CUT
CELERY
FRIED SHALLOTS
SPICES:
1 GARLIG CLOVE
1 tsp WHITE PEPPER
SALT
METHOD:
- Pour around two litters of water into a pot. Add shirimp heads and shells. Bring to a boil
- Using mortar and pestle, grind the garlic, white pepper and salt. Heat a little oil in a wok.
sautee the spice paste until fragrant.
- Add the sauteed paste into the pot containing broth. Toss in tekwan, jicama, black fungus and
dried lily flower
- Place glass noodle on a serving bowl. Pour tekwan soup onto it.
Garnish with fried shallots and chopped celery
