RECIPE PEMPEK FROM WEST SUMATRA ! yummy

here is a generic recipe to make-pempek lenjer.


MAIN INGREDIENTS:


-1 Kg tenggiri (spanish mackerel) or catfish (Snakehead fish)

-1 \ 4 glass of iced water
-300 Grams tapioca starch
-5 Tbsp. flour
- Salt to taste

method:


-clean the fish, remove all the bones. Blend in a food processor
 until it Becomes a smooth paste. drain, if needed. add little
 salt and iced water
-Add tapioca starch and flour Gradually, slowly kneading the
 dough. continue until the dough Reaches good consistency
- shape the dough into long cylinders.
- steam until cooked through.
-if the pempek Came out too big, cut into smaller slices before
 frying.


HOW TO MAKE cuko:

using a pot, bring one liter of water to a boil. in a food processor

or using a mortar and pestle, grind 10 garlic cloves 5 bird's eye
chilies, toasted 2 tablespoons of dried shrimp, sweet soy sauce
and salt until they Become a smooth paste. add to the boiling
water. add coconut sugar, and to wrap it up, vinegar or juice
adjust the spiciness to individual taste.
